Six years ago, Chris and I decided to enroll our kids at Embe South. Little did we know how much our lives were going to change. At the time, Callen (almost 3) had food allergies, and I was pregnant with Elizabeth. Elizabeth came with lots of surprises of her own shortly after her birth. The staff at EmBe was amazing to work with. They learned with us, they took care of our kids, they loved the kids well and all of our quirky, weird dietary needs. My kids gained a confidence that only childcare kids can get by meeting different adults and talking to them. My kids truly are the people they are today because of the love of the staff that support them.

I know along the way, we traumatized some of the teachers, from Beth‘s first hospitalization to her first tube falling out, Beth taking other kids’ food and eating too much protein, and who knows what else. However, the staff was amazing every step of the way.

I want to make a special note to the kitchen staff. Thank you. Beth has always been well-loved and taken care of by you. She speaks so highly of all of you. She is not afraid to let you know when she does not like something new you tried and I know keeps you on your toes, but yet you take it in stride and pick on her right back. You made food fun for her and that is not always easy. Thank you.

I am so sad our time is coming to a close, but I am so excited about Callen and Elizabeth’s new adventures. From the bottom of my heart, Thank you to EmBe South for loving our kids well. We will miss you.
